Detailed description
Making and Ageing
Winemaking : maceration of the whole bunch at 8 ºC for two days, we stalk and crush in order to press.
24 hours disgorging by cold, we temper and start fermentation with a pre-ferment of wild yeasts.
Fermentation under a controlled temperature between 16 and 18 ºC for more than a month.
Ageing : we let malolactic fermentation to start, stopping it in the middle of the process, stir dragging the fine lees which accompany the wine for the 6 months of aging in steel tanks.
Tasting
Visually, a very pale straw yellow colour, dense sensation in the cup.
In nose, very delicate, with notes of white flowers, pear, quince and fresh and herbaceous fennel tones.
In mouth entrance is appetizing with volume and smoothness. A fresh and acid sensation follows, balanced by the glyceric sensation of the wine. Aftertaste brings aromas of the ageing with lees making the flavour to last.
