Detailed description

Making and Ageing

Grape used is chosen from the El Chaconero property vineyards at Villena. After harvest, grains are barrelled and fermented with environmental yeast, looking for a deeper wine. Must fermentation takes place under a controlled temperature of 28ºC. During the process small and frequent daily pumps are carried out.

Wine stays for 12 months in stainless steel tanks, 17 months in new French Allier and Nevers oak barrels and 40 days in new american oak barrels.

Tasting

	Intense and a very lively cherry red colour, clean and very brilliant. Fine and abundant tear.
	High and sedactive intensity. In nose is a red wine in which fruity charge dominates. At first, intense and fine tans give way to fruity notes, pleasant and sweet spicy aromas with an intense mineral background. Complex and very attractive.
	In mouth follows the same pattern as in nose. Passage marked by a ripe red fleshy fruit which go hand in hand with fine tans and spicy notes. Ripe, sweet and tasteful tannins which are refreshed by a superb, integrated acidity and very well defined which makes the drink long and deep.
	Rice, red meat, rabbit, grilled vegetables and roasted lamb.
