Detailed description
Making and Ageing
Vines grown in franc calcareous clay soil for Syrahm Cavernet Sauvignon, Petit Verdot and Garnacha Tintorera varieties; franc sandy soil for varieties Mandó (almost extinct) and Monastrell.
Grape comes from all the varieties planted in 1996 at 550 metres height with and with a length of 15 Hectares. The distribution of the vines is approximately 3000 vines per hectare.
The type of plantation is a vertical trellis system (double cord royat and lira), developing a cultivation system by means of an integrated production system and using organic compost.
Harvest is carried out manually in 15 kg crates with selection table after stalking.
Vinification stage takes places after total stalking and traditional maceration (20 days roughly). Malolactic fermentation with work of lees.
Ageing takes place for 12 months, in 225 and 500 litres French oak barrels, followed by 6 months in 2600 litres clay jars.
