Winemaking
The result of a selection of the 100% tempranillo variety. Harvested in its optimal of health and ripeness in small 15 kg crates.
Stalking takes place at the winery as well as the crushing and going later to fermentation tanks where the wine stays for 12 days under a temperature of 28 ºC. Malolactic stage is carried out in barrel and vintage in American and French oak barrels for 10 months at 50% before being bottled.
The vintage happens in a place excavated in rock which keeps constant temperature and humidity all year round.
Tasting
It is presented at sight as an intense red colour wine with violet shades.
In nose, complex aroma, fine and elegant, with a coffe and chocolate roasted taste.
In mouth is fleshy, round and with a balanced acidity.
Pairing
Ham, cheese not too hard, stew with not too very spicy sauces, boiled or stewed legumes, poultry, red meat, grilled and roasted meat.
