Vineyards
Azpilicueta is based on the Fuenmayor vineyard. More than 800 Hectares are cultivated along its different landscapes.
The Fuenmayor vineyard stretches out over an irregular topography at different altitudes with different soil types. This is translated into many different microclimates and so a same variety can have different expressions.
Not all the plots of land are chosen for the vintage as every season we chose the ones to produce Azpilicueta wines.
Each one of the parcels is controlled : pruning, evolution of the vegetative cycle, progress of the ripeness and tasting of the grapes. The moment of the harvest is determined for every parcel.
The Azpilicueta wines are an assemblage of tempranillo, dominating, giving the identity; Graciano contributing with his particular aromas and structure in order to make an aged wine and Mazuelo providing acidity and freshness in mouth.
Making and Ageing
Handmade haversting.
Fermentation takes place in stainless steel tanks under a controlled temperature of 25ºC roughly.
Maceration takes 12 days roughly.
This wine has been aged for 12 months in American and French oak barrels with domain of the American over the French. Ageing is finished with a minimum period of six months in a bottle.
Tasting Notes
Red cherry and lively colour with good intensity and golden sparkles. Clean and shiny.
Deep nouse where fruity notes highlight over a background of toast wood. Soft vanilla, cocoa and spices aromas.
Pairing
Perfect for sausages, rice, vegetables, mushrooms, red and white meats.
